D'ailleurs, un plat à mauvaise réputation à l'origine, car il utilisait des restes de bœuf déjà cuit, il entre dans la cuisine bourgeoise une fois codifié par Auguste Escoffier, le daron de la « haute cuisine française ». Le plat apparaît à la fin du XIXe, début du XXe, à Paris, donc, et n’est appelé « à la bourguignonne » que parce que… ben… Il y a du pinard dedans, quoi. C’est la période où, la viande devenant plus accessible pour toustes, la bourgeoisie se sent attaquée car on lui retire un de ses jouets de violence symbolique et de mépris de classe préféré, qu’elle avait piqué à la noblesse (l’accès à la viande, si vous suivez). Il faut donc trouver autre chose, un nouveau moyen de se démarquer du bas peuple. De là vient la « haute gastronomie », avec ses plats en sauce et mijotés.Bah oui, parce que pour les faire, il faut, well. Un savoir-faire, du temps, et des thunes (chauffer un plat pendant 5h dans 3L de vin, c’est pas donné à tout le monde).C’est un plat qui est donc très récent, dans l’histoire gastronomique française, qui n’a pas grand-chose de « traditionnel », qui n’est pas originaire de Bourgogne (ce n’est pas une « recette de TERROIR », quoi que ça veuille dire) et dont le but était de se démarquer des pauvres.
